The recently formed Pendulum Hospitality has announced the launch of The Venetian Republic Dining & Bar. The new venue is set to open in late 2018 in the historic Campbell’s Stores at Circular Quay on Sydney Harbour.
“After a significant period of protracted negotiation and planning, we are delighted to announce the new project,” says Nino Zoccali, principal owner of Pendulum Hospitality, which comprises The Restaurant Pendolino and La Rosa The Strand.
“The building and the site are iconic to Sydneysiders as well as interstate and international visitors and we are very excited to be part of this fantastic new redevelopment. With unique heritage architecture and direct views of both the Sydney Harbour Bridge and Opera House, the site is a great fit for our style of venue and we think that the location is truly world class.”
Pendulum Hospitality’s venue will sit alongside several other food and beverage operators in the Campbell’s Stores building. The Venetian Republic Dining & Bar will include a 40-seat al fresco dining area, a dedicated Venetian Bollicine & Champagne Bar, a 100-seat dining room and event spaces.
Both the food and wine menu will take inspiration from the Republic of Venice, which once covered the present day area of the northern Italian border regions through to the territories of the eastern Mediterranean including the Greek Islands of Corfu, Ithaca, Santorini and Crete.
“We’re very excited about the concept. It will be a predominately Venetian Mediterranean seafood restaurant with influences from the Dalmatian Coast, Montenegro and the former Venetian reigned Greek Islands,” says Zoccali.
“My wife and business partner, Krissoula Syrmis, is from this part of Greece so we’ve spent a lot of time in this very beautiful part of the world. Ties to Venice are also strong at Pendulum Hospitality, with our group sommelier Cristian Casarin born and raised just 30 kilometres from Venice.”
The Venetian Republic Dining & Bar is the first confirmed opening for the Campbell’s Stores redevelopment. The building, constructed in 1850, and the harbour foreshore that surrounds it are currently undergoing a $32 million renovation and restoration.
Announcements regarding key appointments will be made throughout 2018.
