The big names just keep coming at Crown Towers Sydney, with the hotel announcing three new restaurants.
Ross and Sunny Lusted will return to the dining scene with the launch of Woodcut, a concept anchored by local produce cooked over wood and charcoal.
The team will change the menu daily, but diners can expect to see Fraser Island crab, O’Connor beef and Maremma duck cooked in three open kitchens.
“Imagine whole John Dory in a cast iron pan straight from the wood oven, Queensland mud crab cooked in steam kettles or the rich and earthy flavours of duck slow cooked in clay pots,” says Ross.
Woodcut is slated to open in December and marks Sunny and Ross’s return to the industry after the closure of The Bridge Room in April 2019.
Ormeggio’s Alessandro Pavoni has also joined the precinct, with a’Mare set to celebrate the charm of Italian fine dining.
Seafood will take pride of place on a’Mare’s seasonally rotating menu, with a pizzeria cafe to be located next door to the restaurant offering pastries, Neapolitan pizza, Italian wines and gelato.
“It has been a dream of mine to create the best classical Italian restaurant in Australia, says Pavoni.
“I am inspired by the nostalgic romance of dining out; when service was paramount, food was simply delicious and the maître-d knew your name. This is what I envisage for a’Mare at Crown Sydney.”
Ryuichi Yoshii rounds out the latest restaurants announcements, with the chef set to open Yoshii in collaboration with Nobu.
The 12-seat restaurant will be located inside the entrance of Nobu and will see the chef offer an omakase experience.
“One of the things I love most about Sydney is the seafood produce we have access to, so I can’t wait to start creating dishes together with chef Nobu that hero that remarkable fresh local produce,” says Yoshii.
Crown Towers Sydney has also announced Sarah Briegel as culinary director.
Briegel has spent the last 27 years working in kitchens across the world, and will lead the culinary program across the hotel.
Crown Towers Sydney will open its doors in December 2020.
